Carob Brownies

The sweet, chocolate-tasting pods of the carob tree are a special treat on Tu
B'Shevat. According to tradition, they're eaten on only two holidays (the other
holiday is Lag B'Omer). Since the pods are not always available, desserts made
of carob powder are a delicious substitute.

1/3 cup vegetable oil
1/2 cup honey
2 eggs
1 teaspoon vanilla
1/4 cup apple juice
1/2 cup carob powder
2/3 cup unbleached, all purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup chopped nuts (optional)

1. Preheat oven to 350 degrees.

2. Mix oil and honey in a mixing bowl. Beat in eggs, one at a time. Stir
in vanilla and apple juice.

3. Sift together carob powder, flour, salt and baking powder in another
bowl. Gradually add dry ingredients to wet ingredients, stirring until smooth.
Add nuts, if desired.

4. Spread mixture into greased 8" square baking pan and bake about 20-25
minutes, or until toothpick comes out clean.

5. Cut into square while still warm.

Makes 16 brownies.
