B'nai Emet -> Departments -> Women's League -> Recipes -> Purim

Cheese-filled Hamantashen

Dough:
4 eggs
1 c. oil
1-1/2 c. sugar
2 t. vanilla
1 T. baking powder
½ t. salt
4 c. flour
pinch of lemon rind

Cheese filling:
¼ lb. grated or crumbled feta cheese
1 T. cream cheese
1 egg
1 T. flour

To prepare dough, beat eggs, then add remaining ingredients, beating well after each addition. Chill dough several hours or overnight. Roll out dough and cut in circles with cutter or rim of glass dipped in flour.

To prepare filling, combine all ingredients.

To assemble hamantashen, place one teaspoon of filling in center of each dough circle. Fold edges over in three sections. Bake at 350 F. for about 20 minutes.
