Pesach Apple Crisp (4/2003)

5 med. Granny Smith apples
½ c. sugar
1 t. ground cinnamon
2 t. lemon juice
Shortening or cooking spray
½ c. unsalted matzo meal
1/3 c. sugar
¼ c. sliced almonds
2 T. margarine, melted
1/8 t. salt

Peel, core, and cut the apples into ¼-inch slices.

Combine apple slices, sugar, cinnamon and lemon juice, and toss gently. Spoon into 11 x 7-inch baking dish coated with cooking spray; set aside.

Combine the matzo meal, sugar, almonds, margarine, and salt, and stir well. Sprinkle over apple mixture.

Bake at 350 degrees for one hour or until browned.

Yield: 6 servings (serving size = 1 cup)
