Three recipes!!

 


Eggplant Farfel

This is a good side dish or vegetarian main dish

3 T. oil
1 onion, chopped
1 med. eggplant, cubed
1/2 green pepper, chopped
11 oz. tomato sauce, Kosher for Passover
1 t. salt
½ t. pepper
1-1/2 c. matzah farfel
2 tomatoes, cubed

Saute onions. Add eggplant, green pepper, tomato sauce, salt, and pepper. Cook 15 minutes, until eggplant is tender. Stir in tomatoes. Arrange in 2-quart casserole in layers, alternating vegetables and farfel, with vegetables on top and bottom. 

Bake uncovered at 350 degrees for 25 minutes.


Matzah Chicken Pie

This is a perfect way to use leftovers from the Seder.

6-7 T. oil
2 c. onions, chopped
2 T. garlic, minced
1-1/2 c. sliced mushrooms (about 1/3 pound)
3 c. cooked chicken or turkey, bite-sized pieces
Salt and pepper
1 c. chopped parsley
5 eggs, lightly beaten
5-6 matzahs
1 c. chicken stock

Heat 5 T. of the oil in a large skillet. Slowly sauté the onion and garlic. Add the mushrooms and sauté an additional 5 minutes. Let cool. Stir in the chicken, salt, pepper, parsley, and eggs. Lightly oil a shallow 6-8 c. baking dish. Dip two of the matzahs into the stock until well moistened but not falling apart. Lay them in the baking dish, breaking pieces to fit. Spoon half the chicken mixture on top, and cover with one more moistened matzah, the remaining chicken, and the two remaining matzahs. Pour 2 t. oil over the top.

Bake at 375 degrees for 15 minutes. 

Sprinkle with remaining oil and bake an additional 15 minutes, or until the top is a rich, crisp brown. 

Let cool for 10 minutes, then serve.


Matzah Farfel Kugel

4 c. matzah farfel
4 eggs, beaten
2/3 c. granulated sugar
¼ t. salt
½ c. oil
3 tart apples, peeled, cored, and diced
½ c. raisins
juice of 2 oranges (about ¾ c.)
1 t. cinnamon

Place farfel in a bowl and cover with cold water for one minute, then drain. In a separate bowl, combine sugar and oil with beaten eggs by mixing or beating. Blend in salt and orange juice. Add diced apples, raisins and cinnamon to mixture and stir. Pour over farfel and stir to combine. Pour entire mixture into a 9" X 13" greased baking dish. 

Bake at 350 degrees for one hour and serve warm.
