B'nai Emet -> Departments -> Women's League -> Recipes -> High Holiday RecipesTzimmes (pareve)9 medium carrots (about 1 pound) Heat the oven to 350 degrees. Cut the carrots into 2-inch pieces. Bring a large saucepan of water to a boil, then lower the heat to medium. Add the sweet potatoes (in their skins) to the water, and cook for 20 minutes, adding in the carrots after the first 10 minutes. Drain the carrots and sweet potatoes in a large colander, and then set aside until the cooked veggies are cool enough to handle. Peel the sweet potatoes, and cut the peeled potatoes into nice-sized chunks. Place all ingredients into a large mixing bowl. Mix with a wooden spoon, allowing ingredients to mix and mingle. Spray a 2-quart baking dish with vegetable-oil spray, and transfer ingredients into the baking dish. Cover the baking dish with a tightly-sealed foil hood, and bake for 45 minutes. Baste with pan juices every 15 minutes. Remove from the oven and serve immediately. Serves 8-10. Sandy Harris |
