Tabouli
1 c. bulgur wheat
½ c. warm water
1 med. tomato, chopped
½ c. chopped parsley
2 T. chopped scallion
1 T. fresh mint or 1 t. dried mint
½ t. salt
¼ c. lemon juice
2 T. cooking oil
1 T. olive oil
In a bowl, combine bulgur and water. Let stand ½ hour. Stir in tomatoes,
parsley, green onion, mint, salt, and dash pepper. Combine lemon juice and oils.
Toss with bulgur mixture. Cover and chill. Serve in lettuce-lined bowl.
