Blintz Loaf

If you want to serve a delicious dairy dish for Shavu'ot without the effort of making individual blintzes, try this recipe. Serves 4-6.

Batter: ¼ c. melted unsalted butter ¼ c. sugar 2 eggs 3/4 c. milk 1-1/4 c. flour 1 t. baking powder ½ teaspoon salt

Filling: 1 lb. small-curd cottage cheese 1 egg 1 t. sugar Pinch of salt 2 T. melted butter

Mix all batter ingredients in a blender or mixer, processing until smooth. Pour half the batter mixture in a greased 9-inch square or round pan. Mix the filling ingredients and spoon over the batter. Cover with the remaining batter mixture. 

Bake in a pre-heated 350-degree oven for one hour.
