Chatzilim (Eggplant)

1 eggplant
½ onion, finely chopped
Salt and pepper to taste
Juice of ½ lemon
2 T. mayonnaise or olive oil
Lettuce leaves, tomato, cucumber slices

Place eggplant above open gas flame and let it burn on all sides until soft. (Or prick eggplant with fork and place on oven rack. Bake for one hour at 350 degrees.) Cool and peel. Mash the pulp with a fork until it is like a paste. Add onion, salt, pepper, and lemon juice. Stir in mayonnaise or olive oil (or 1 T. of each). Mix well. Serve on lettuce leaves as appetizer, garnish with cucumber and tomato slices. Serves 6-8.
